Traditionally known as “bi cotti” — meaning twice-baked, these hard, dry biscuits were sealed in earthen jars and packed into the hold of ships during the Roman Empire. These sweet biscuits were carried by husbands in Roman legions on extended journeys for nourishment because of their long shelf life. In keeping with the bi cotti name, Melinda’s Biscotti was adapted to fit the taste preference of the Canadian palate.
